Danish Apple and Prune Cake

Ingredients

For the batter:

  • 140g/5oz butter
  • 200g/7oz caster sugar
  • 2 eggs, well beaten
  • 85g/3oz self-raising flour
  • 115g/4oz ground almonds
  • 125ml/4floz milk
  • 1 tsp vanilla essence
  • 1 tbsp boiling water
  • 1/2 tsp baking powder

Further ingredients:

  • 10 stoned prunes, chopped
  • 115g/4oz shelled walnuts, finely chopped and mixed with 2tbsp sugar
  • 2 pink lady apples cored and sliced
  • 3 tbsp sugar
  • ground cinnamon
  • butter

Recipe

Cream together all the ingredients for the batter in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into a well-buttered 25cm/10in round cake tin lined with baking paper.

Place the prunes evenly on the batter. Spoon over the walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake in a preheated oven at 180° celcius for 45 minutes loosely covered with a piece of foil.

Sprinkle the surface with the sugar and some cinnamon. Dot with butter and bake for a further ~15 minutes or until a skewer comes out clean. (watch for over-browning) and cool in the tin.
